Seared Tuna with Soy Miso Slaw

Yields 2-4 servings

Take a simple sesame slaw up a notch by shaking on Spicy Gochu Lil Croutons and pairing it with seared tuna. This light salad makes for a perfect poolside lunch with friends, or a light dinner before enjoying a summer evening walk. Not a fan of raw tuna? Swap it out for canned tuna, grilled shrimp, or crispy chicken thighs.


Assembly

Step 1
For the Tuna: In a rimmed dish or container that can fit both tuna steaks side by side in a single layer, combine soy sauce, toasted sesame oil, and brown sugar, until sugar dissolves. Place tuna in the container and coat with marinade. Let sit in fridge for 10 minutes.

In a shallow dish, combine white and black sesame seeds, spreading into an even layer. Once tuna has finished marinading, coat each steak with sesame seeds. Set aside in fridge until ready to cook.

Step 2
For the Slaw: Combine slaw ingredients, aside from the Spicy Gochu Lil Croutons, in a large bowl. In a small bowl, combine soy miso dressing ingredients until smooth.

Step 3
To Assemble: Heat a medium cast-iron skillet over medium-high heat. Once pan is hot, reduce heat to medium, add olive oil, then carefully place tuna steaks into the pan. Sear until crust forms, then flip. Repeat on all sides, being sure to keep the centre raw. Remove from pan and set aside.

Toss slaw with dressing. Slice tuna steaks and place on top of slaw. Shake Spicy Gochu Lil Croutons on top of the slaw and serve immediately.

Ingredients

Seared tuna:

2 steaks Sushi-grade tuna

¼ cup Soy sauce

½ tsp Toasted sesame oil

1 tbsp Dark brown sugar

4 tbsp White sesame seeds

2 tbsp Black sesame seeds

2-3 tbsp Olive oil, for searing

Slaw:

2 cups Green cabbage, shredded

1 cup Purple cabbage, shredded

2 sprigs Green onion, thinly sliced

¼ cup Cilantro, chopped

Spicy Gochu Lil Croutons

Soy Miso Dressing:

2 tbsp Soy sauce

1.5 tsp White miso paste

⅛ tsp Sesame oil

1 tsp Maple syrup

2.5 tbsp Orange juice, fresh

2 tsp Meyer Lemon Honey Living Vinegar

1 tsp Ginger, grated

1 small clove Garlic, grated
