Fattoush-ish Salad

Yields 4-5 servings

Everything about this is a classic fattoush salad, except there’s no need to turn on the oven! Assemble your salad using our recipe (or your fave version), but skip the pita chips and top it with our Herby Za’atar Lil Croutons instead. Not only are they easier to pick up with a fork, but they’re just as crunchy and layered with flavor from olives to toasted almonds to herbs.


Assembly

Step 1
In a small bowl, combine ingredients for lemon sumac dressing.

Step 2
In a large bowl, combine salad ingredients, aside from Herby Za’atar Lil Croutons.

Step 3
Add dressing to the salad and toss. Shake on Herby Za’atar Lil Croutons and serve immediately.

Ingredients

Lemon Sumac Dressing:

Juice of ½ lemon

½ cup EVOO

1 tsp Sumac

½ clove Garlic, grated

1.5 tsp Pomegranate molasses, plus more for garnish

Salt and black pepper

Assembly:

1 head Romaine, thinly sliced

5-8 Radishes, thinly sliced

3 Persian cucumbers, cut in half lengthwise then thinly sliced

1 cup Cherry tomatoes, halved

½  Small red onion, thinly sliced

3 sprigs Mint, chopped

1 small handful Parsley, chopped
