Tuna Salad Hand Rolls

Yields 1 serving

A quick little snacky meal for when you don’t feel like turning on the stove! If you have leftover rice in the fridge, you can easily heat that up in the microwave and use that as well. We topped it all off with cucumbers, avocado, furikake, and pickled red onion, but you can add other ingredients too. You can even set up a little assembly station and let everyone make their own creation! Easily scale up the recipe for more servings.


Assembly

Step 1
Prepare tuna salad by combining canned tuna, Toasted Coconut Dressing, mayonnaise, and scallions.

Step 2
To assemble: Cut seaweed sheets into roughly 5x5” squares. Let rice cool slightly, then spread a small amount down the middle of the seaweed square. Top with tuna salad and other toppings, fold up (like a taco), and enjoy!

1 can Tuna packed in oil, drained

2 tbsp Toasted Coconut Dressing

1 tbsp Mayonnaise

2 tsp Scallions, chopped

Seaweed sheets

Cooked sushi rice, cooled slightly

Toppings (eg. Cucumber, avocado, pickled red onion, furikake, microgreens, etc)
