Quick-Pickled Garlic Scapes

Yields 1 pint jar

The garlic scape season is so short, and yet so abundant. Do not let your scapes go to waste! Use this easy quick-pickle method to preserve your garlic scapes, so that you can enjoy them all summer long.


Assembly

Step 1
Coil garlic scapes and tightly pack them into a pint jar, squeezing thinner/smaller stalks into the middle of the coil. You can also chop them into smaller pieces instead.

Step 2
In a small pot, combine Meyer Lemon Honey Living Vinegar, water, sea salt, and sugar. Heat on high until salt and sugar have dissolved. Do not bring to a boil.

Step 3
Pour brine into the packed jar and let cool for about 30 minutes. Cover and transfer to fridge. They will be ready in about 12-24 hours. Keep refrigerated.

15-20 Garlic scapes stalks

½ cup Meyer Lemon Honey Living Vinegar

½ cup Water

2 tsp Sea salt

2 tsp Sugar
