Sesame Peanut Noodles

Yields 1-2 servings

This noodle dish is a riff on Taiwanese sesame noodles, but we’ve added peanut butter to the sauce, along with our Carrot Ginger Dressing. You can whip this up during the week for a light dinner, topped with baked salmon and shredded vegetables, or you can really dress it up the way we did and top it with steak, ikura, and microgreens! The sauce itself is vegan, so the toppings are truly your own choice. Have fun with it!

Assembly

Step 1
In a medium bowl, combine tahini, Carrot Ginger Dressing, peanut butters, garlic, hot water, salt, and black pepper. Mix until smooth.

Step 2
Cook the noodles. Drain and reserve some of the hot water. Mix noodles in the sauce, adding some of the hot cooking water to thin out the sauce, if needed.

Step 3
Finish with toppings of your choice, and enjoy!

Ingredients

2 tbsp Tahini

2 tbsp Carrot Ginger Dressing

1.5 tbsp Peanut Brothers Smooth Classic peanut butter

½ tsp Garlic, grated

1.5 tbsp Hot water

Salt and black pepper, to taste

1-2 blocks Dry noodles of your choice
