Apple Slaw Tuna Melt

Yields 1-2 servings

As Fall rolls around the corner, we want to start sharing recipes with apples, but it’s still quite warm where we are, so it doesn’t seem right to skip straight to pies and crumble. We love a tuna melt, so we decided to incorporate an apple slaw right into the sandwich, along with Classic Lay’s potato chips. The sweet and tangy slaw balances out the salty, briny tuna salad, and you get a perfect crunch from the chips.


Ingredients

Apple Slaw:

1½ cups Cabbage, finely chopped

¾ cup Golden Delicious apple, chopped

¾ cup Thick sour cream or creme fraiche

¼ cup Dill, minced

2 tbsp Chives, thinly sliced

1-2 tbsp Lemon juice, fresh

1 tbsp Hot Deli Mustard

Tuna Salad:

2 small (80 g) cans Tuna, packed in oil

3-5 Cornichons, chopped

1 tbsp Red onion or shallot, minced

2 tbsp Spicy Serrano Mayo

1 tsp Hot Deli Mustard

1 tbsp Parsley, minced

2-3 tsp Lemon juice, fresh

To Assemble:

Butter

Cheddar cheese

Sourdough bread

Potato chips (Classic Lay’s)

Assembly

Step 1
In a medium bowl, prepare apple slaw by combining all ingredients together.

Step 2
In a small bowl, combine tuna salad ingredients. Spread desired amount onto a slice of bread.

Step 3
Heat a non-stick or cast-iron pan over medium-low. Melt butter. Place slice of bread with tuna salad face up in the pan, then evenly sprinkle grated cheddar cheese on top of the tuna.

Step 4
Place another slice of bread on top. Flip once one side has toasted and continue cooking until cheese has melted, covering with a lid as needed.

Step 5
Once cheese has fully melted and bread is nicely toasted, open up the sandwich and add heaping spoonfuls of apple slaw and top with a small handful of chips (see note). Replace toast and enjoy!

Note:
While we really liked having the slaw and chips on the sandwich, you could always serve them on the side instead and just enjoy the tuna melt as is.
