Caesar Salad Smash Tacos

Yields 4-5 servings

A fun riff on your classic chicken caesar salad! We’ve combined the viral smash tacos concept with a chicken caesar salad, to create a fun and simple dinner. The best part about this is that the tortillas get a little crispy on the edges, and the meat is ultra-juicy and hot, as opposed to a salad where the chicken has usually cooled off before serving. That said, you can’t forget the most important part: the croutons! Since regular croutons would be a bit too clunky for the tacos, we used our Garlicky Parm Lil Croutons for big crunch that’s easy to eat and packed with flavor.


Ingredients

Chicken Mixture:

1.5 lbs Ground chicken

2 cloves Garlic, grated/minced

¼ tsp Chili powder

½ tsp Paprika

¾ tsp Thyme, dried

¾ tsp Oregano, dried

Salt and black pepper

Caesar Dressing:

½ cup Mayonnaise

1 clove Garlic, grated

1 filet Anchovy, minced

1 tbsp Lemon juice

1 tsp Capers, chopped

2-3 dashes Worcestershire

2-3 tbsp Parmesan cheese

To Assemble:

15 (4-inch) or 8 (6-inch) flour tortillas

Olive oil, for cooking

½ to 1 head Romaine lettuce, thinly sliced

Parmesan cheese

Garlicky Parm Lil Croutons

Assembly

Step 1
Prepare Caesar dressing by combining all dressing ingredients in a small bowl. Set aside in the fridge.

Step 2
For the chicken mixture, start by mixing ground chicken with a heavy pinch of salt in a medium bowl, until it is slightly tacky. Add remaining herbs and spices, mix well.

Step 3
Spread chicken mixture into a thin layer on one side of each tortilla, making sure to spread it as far to the edges as possible to account for shrinkage with cooking.

Step 4
Heat large skillet over medium. Add a few tablespoons of olive oil and place 2-3 tortillas meat-side down, in a single layer. Cook for 2-3 minutes or until cooked. Flip and lightly crisp up the tortillas.

Step 5
Toss romaine lettuce with Caesar dressing. Place small amounts onto cooked smashed tacos, topping with parmesan cheese and Garlicky Parm Lil Croutons right before serving.
