Take a trip to Quebec in the summertime when the wild blueberries grow in bunches next to towering maple trees. Here, we mix blueberries and maple syrup to make a rich and smooth vinegar that deftly balances sweet and sour. A touch of oak aging rounds it out into this fresh, fruity, and utterly Canadian take on balsamic.
